Delicious roll ups filled with tender roast beef, creamy provolone cheese, and crispy fried onions, perfect for game night or a casual dinner.

- 4 large flour tortillas (12 inches)
- 8 slices provolone cheese (thinly sliced)
- 12 ounces deli roast beef (medium-thin)
- 1 cup French fried onions
- 2 tablespoons extra virgin olive oil
- 1 can beef consommé (10.5 ounces)
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
- Lay a tortilla flat and place 2 slices of provolone cheese over half of it.
- Add about 3 ounces of roast beef and a handful of French fried onions on top.
- Brush the far edge of the tortilla with olive oil, roll tightly, and place seam-side down on the baking sheet.
- Brush the tops and sides with olive oil.
- Bake for 8 to 10 minutes, rotating halfway through, until golden brown and cheese is bubbly.
- While baking, prepare the au jus by combining beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a saucepan. Simmer for 3 to 4 minutes.
- Let the roll-ups rest for 2 minutes, then slice into halves or thirds and serve with warm au jus.
Notes
Consider adding jalapeños or more veggies for a twist. Make-ahead by assembling and refrigerating before baking.
