Description

Delicious roll ups filled with tender roast beef, creamy provolone cheese, and crispy fried onions, perfect for game night or a casual dinner.


Ingredients

  • 4 large flour tortillas (12 inches)
  • 8 slices provolone cheese (thinly sliced)
  • 12 ounces deli roast beef (medium-thin)
  • 1 cup French fried onions
  • 2 tablespoons extra virgin olive oil
  • 1 can beef consommé (10.5 ounces)
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
  2. Lay a tortilla flat and place 2 slices of provolone cheese over half of it.
  3. Add about 3 ounces of roast beef and a handful of French fried onions on top.
  4. Brush the far edge of the tortilla with olive oil, roll tightly, and place seam-side down on the baking sheet.
  5. Brush the tops and sides with olive oil.
  6. Bake for 8 to 10 minutes, rotating halfway through, until golden brown and cheese is bubbly.
  7. While baking, prepare the au jus by combining beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a saucepan. Simmer for 3 to 4 minutes.
  8. Let the roll-ups rest for 2 minutes, then slice into halves or thirds and serve with warm au jus.

Notes

Consider adding jalapeños or more veggies for a twist. Make-ahead by assembling and refrigerating before baking.
