Description

Frito Cowboy Cabbage is a hearty and flavorful dish that combines cabbage with Fritos, ground beef, and a variety of seasonings for a unique twist on traditional cabbage recipes.


Ingredients

  • 1 medium head of cabbage, chopped
  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 2 cups Fritos corn chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped cabbage to the skillet and cook until it begins to soften.
  3. Stir in the black beans, corn, and taco seasoning, mixing well.
  4. Cook for an additional 5-7 minutes until everything is heated through.
  5. Remove from heat and stir in half of the Fritos and half of the cheese.
  6. Transfer the mixture to a serving dish and top with the remaining Fritos and cheese.
  7. Garnish with diced tomatoes and green onions if desired.
  8. Serve warm and enjoy!
