- 1 medium head of cabbage, chopped
- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 2 cups Fritos corn chips
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced tomatoes (optional)
- 1/4 cup chopped green onions (for garnish)
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the chopped cabbage to the skillet and cook until it begins to soften.
- Stir in the black beans, corn, and taco seasoning, mixing well.
- Cook for an additional 5-7 minutes until everything is heated through.
- Remove from heat and stir in half of the Fritos and half of the cheese.
- Transfer the mixture to a serving dish and top with the remaining Fritos and cheese.
- Garnish with diced tomatoes and green onions if desired.
- Serve warm and enjoy!
