Description

A vibrant salad featuring grilled asparagus, creamy feta, and zesty lemon, perfect for summer gatherings.


Ingredients

Scale
  • 2 pounds thick asparagus (ends trimmed)
  • 4 tablespoons extra virgin olive oil (divided)
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper (or to taste)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon onion powder
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 cup feta cheese (crumbled)

Instructions

  1. Preheat the grill to high.
  2. Arrange the cleaned and trimmed asparagus spears on a foil-lined baking sheet.
  3. Drizzle the asparagus with 2 tablespoons of olive oil. Sprinkle with salt, pepper, minced garlic, onion powder, and Italian herbs.
  4. Carefully transfer the asparagus to the hot grill.
  5. Cover and cook for 3 to 4 minutes.
  6. Once done, transfer the asparagus back onto the foil-lined baking sheet to cool slightly.
  7. Cut the grilled asparagus into bite-sized pieces and add to a large mixing bowl.
  8. Pour the remaining olive oil, lemon zest, and lemon juice into the bowl.
  9. Add the crumbled feta cheese and gently toss again.
  10. Transfer everything to a serving platter and enjoy!

Notes

Perfect for summer gatherings and barbecues. Can be made ahead of time and stored in the fridge.
