- 2 pounds thick asparagus (ends trimmed)
- 4 tablespoons extra virgin olive oil (divided)
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon freshly ground black pepper (or to taste)
- 4 cloves garlic (minced)
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon onion powder
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 cup feta cheese (crumbled)
Instructions
- Preheat the grill to high.
- Arrange the cleaned and trimmed asparagus spears on a foil-lined baking sheet.
- Drizzle the asparagus with 2 tablespoons of olive oil. Sprinkle with salt, pepper, minced garlic, onion powder, and Italian herbs.
- Carefully transfer the asparagus to the hot grill.
- Cover and cook for 3 to 4 minutes.
- Once done, transfer the asparagus back onto the foil-lined baking sheet to cool slightly.
- Cut the grilled asparagus into bite-sized pieces and add to a large mixing bowl.
- Pour the remaining olive oil, lemon zest, and lemon juice into the bowl.
- Add the crumbled feta cheese and gently toss again.
- Transfer everything to a serving platter and enjoy!
