- 2 1/2 lbs chicken breasts (cut into 1 1/2″ thick pieces)
- 2 medium zucchini (cut into thick rings)
- 1 red bell pepper (cut into 1 1/2″ thick pieces)
- 1 yellow bell pepper (cut into 1 1/2″ thick pieces)
- 1 purple onion (quartered)
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons Worcestershire sauce
- 2 tablespoons honey
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 4 cloves garlic (minced)
- 1 teaspoon liquid smoke
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare the Marinade: In a medium bowl, add pineapple juice, soy sauce, Worcestershire sauce, honey, lemon juice, lemon zest, minced garlic, liquid smoke, salt, and black pepper. Whisk together until well combined.
- Marinate the Chicken: Place the chicken pieces in a large mixing bowl and pour the marinade over the meat. Stir well to ensure each piece is coated. Cover the bowl and refrigerate, allowing the chicken to marinate for at least 8 hours or, preferably, overnight.
- Skewer the Ingredients: Once marinated, take soaked skewers and thread them alternatingly with the marinated chicken and chopped vegetables. Securely pack them, leaving a little space between each piece to allow even grilling.
- Grill to Perfection: Preheat your grill to a medium-high heat. Place the skewers on the grill and cook for about 10 minutes, turning every 2-3 minutes for evenly grilled, golden-brown results.
- Rest Before Serving: Once grilled, remove the skewers from the grill and let them rest for at least 5 minutes before serving.
- Garnish and Serve: Sprinkle with chopped parsley for a fresh finish.
