Instructions
- Create the Dry Rub: In a large bowl, combine kosher salt, garlic powder, onion powder, smoked paprika, black pepper, and chili powder (if using). Whisk these ingredients until evenly mixed.
- Prepare the Wings: Pat the chicken wings dry with paper towels. This step is crucial; dry wings allow for better crisping. Add the wings to the dry rub mixture and toss them well until coated evenly.
- Make the Sauce: In a medium bowl, combine the melted butter, Frank’s Red Hot sauce, additional kosher salt, garlic powder, onion powder, and chili powder. Stir until the sauce is smooth and well-blended, then set aside.
- Preheat the Grill: Heat your grill or grill pan to medium-high. Before placing the wings, lightly oil the grill grates with vegetable oil to prevent sticking.
- Grill the Wings: Place the wings on the hot grill. Cook them for about 15 to 20 minutes, flipping and pressing down occasionally until the skin is crisp, and the meat reaches an internal temperature of 165°F.
