Description

Delicious stacks of crispy hash browns layered with fluffy scrambled eggs, cheddar cheese, and creamy sausage gravy, perfect for brunch or a hearty breakfast.


Ingredients

  • 1 tablespoon butter
  • 2 sweet Italian sausage links
  • 4 tablespoons all-purpose flour
  • ¼ teaspoon dry mustard
  • ¼ teaspoon kosher salt
  • 2 cups whole milk
  • 20-ounce bag Simply Potatoes® Shredded Hash Browns
  • 6 whole eggs
  • 6 ounces cheddar cheese

Instructions

  1. Melt the butter in a medium saucepan over low heat and cook the crumbled sausage until browned.
  2. Stir in the flour, dry mustard, and kosher salt, then whisk in the milk until the mixture is thick and creamy.
  3. Shape the shredded potatoes into discs and heat the Panini press or frying pan over medium-high heat, cooking each disc until crispy and golden-brown (about 4-5 minutes per side).
  4. In a separate skillet, scramble the eggs with a splash of milk until desired consistency.
  5. Assemble the stacks by layering each hash brown disc with scrambled eggs and cheddar cheese, then drizzle with sausage gravy.

Notes

For a different flavor, try using ground turkey or a plant-based sausage. You can also add sautéed vegetables for extra nutrition.
