- 2 cups grated carrots
- 1 cup crushed pineapple, drained

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your cake pan.
- Whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
- Beat the eggs until fluffy in another bowl. Mix in the vegetable oil and vanilla extract.
- Stir in the grated carrots and crushed pineapple.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Pour the batter into the prepared cake pan, smoothing the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
- Frost with cream cheese frosting once cooled.
