Description

A delightful cake that combines tropical pineapple with rich carrot flavor, topped with cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • Cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pan.
  2. Whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. Beat the eggs until fluffy in another bowl. Mix in the vegetable oil and vanilla extract.
  4. Stir in the grated carrots and crushed pineapple.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  6. Pour the batter into the prepared cake pan, smoothing the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  9. Frost with cream cheese frosting once cooled.
