Description

Delight in the tangy and creamy flavors of these lemon cheesecake bars with a crunchy graham cracker crust. Perfect for any gathering.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine graham cracker crumbs, 1/3 cup sugar, and melted butter in a medium bowl.
  3. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  4. Beat the softened cream cheese and 1 cup of sugar together in a large mixing bowl until smooth, about 2-3 minutes.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Mix in flour, lemon juice, lemon zest, and vanilla extract until well-combined.
  7. Pour the cheesecake filling over the crust and smooth the top with a spatula.
  8. Bake for 25-30 minutes, or until the center is set and slightly jiggles when shaken.
  9. Cool completely at room temperature before chilling in the refrigerator for at least 4 hours prior to slicing.

Notes

These bars can be made a day in advance for optimal flavor blending. They store well in the refrigerator for up to five days.
