- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1/4 cup all-purpose flour
- 1/2 cup freshly squeezed lemon juice
- Zest of 1 lemon
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine graham cracker crumbs, 1/3 cup sugar, and melted butter in a medium bowl.
- Press the mixture firmly into the bottom of the prepared pan to form the crust.
- Beat the softened cream cheese and 1 cup of sugar together in a large mixing bowl until smooth, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Mix in flour, lemon juice, lemon zest, and vanilla extract until well-combined.
- Pour the cheesecake filling over the crust and smooth the top with a spatula.
- Bake for 25-30 minutes, or until the center is set and slightly jiggles when shaken.
- Cool completely at room temperature before chilling in the refrigerator for at least 4 hours prior to slicing.
