Description

A savory, umami-rich fried rice dish featuring tender chicken, crisp vegetables, and fluffy eggs, all infused with the nutty aroma of sesame oil.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 cup mixed vegetables
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat until shimmering.
  2. Sauté mixed vegetables for about 3 minutes until tender.
  3. Push vegetables to one side and pour in beaten eggs into the clear space, stirring gently until scrambled.
  4. Add diced chicken and chilled rice, breaking up clumps as you go.
  5. Pour soy sauce over the mixture and stir to combine.
  6. Cook for an additional 3-5 minutes, stirring frequently.
  7. Mix in chopped green onions and season with salt and pepper.
  8. Serve hot as a main course or side dish.

Notes

For best results, use day-old rice and have all your ingredients prepped ahead of time. Feel free to customize with additional proteins or vegetables.
