- 1 low-carb tortilla
- 1/2 cup cooked chicken, shredded
- 2 tablespoons Greek yogurt
- 1 Laughing Cow cheese wedge
- Ranch seasoning to taste
- Cooking spray or oil for grilling
Instructions
- Preheat your non-stick skillet over medium heat and coat it with cooking spray or a touch of oil to prevent sticking.
- Combine the shredded chicken, Greek yogurt, and ranch seasoning in a mixing bowl, blending them until well mixed.
- Spread the chicken blend on one half of the low-carb tortilla, and crumble the Laughing Cow cheese on top.
- Fold the tortilla in half creating a pocket and place it into the hot skillet.
- Cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
- Remove from the skillet, let it cool for a minute, then cut into wedges and serve warm.
