Description

A delicious and protein-packed quesadilla filled with tender chicken, creamy Greek yogurt, and zesty ranch seasoning, all encased in a crispy low-carb tortilla.


Ingredients

  • 1 low-carb tortilla
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt
  • 1 Laughing Cow cheese wedge
  • Ranch seasoning to taste
  • Cooking spray or oil for grilling

Instructions

  1. Preheat your non-stick skillet over medium heat and coat it with cooking spray or a touch of oil to prevent sticking.
  2. Combine the shredded chicken, Greek yogurt, and ranch seasoning in a mixing bowl, blending them until well mixed.
  3. Spread the chicken blend on one half of the low-carb tortilla, and crumble the Laughing Cow cheese on top.
  4. Fold the tortilla in half creating a pocket and place it into the hot skillet.
  5. Cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
  6. Remove from the skillet, let it cool for a minute, then cut into wedges and serve warm.
