Description

Delightful, moist muffins bursting with the sweetness of honey and the rich flavor of cornmeal, perfect for breakfast or as a side dish.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 2 large eggs
  • Additional honey for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C) and grease your muffin tin.
  2. Mix the dry ingredients: cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  3. Combine the wet ingredients: milk, honey, vegetable oil, and eggs in another bowl.
  4. Bring it together by pouring the wet ingredients into the dry mixture and gently folding until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  6. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  7. Remove from the oven and drizzle with additional honey before serving.
