- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder

- 1 cup milk
- 1/2 cup honey
- 1/4 cup vegetable oil
- 2 large eggs
- Additional honey for drizzling
Instructions
- Preheat your oven to 400°F (200°C) and grease your muffin tin.
- Mix the dry ingredients: cornmeal, flour, sugar, baking powder, and salt in a large bowl.
- Combine the wet ingredients: milk, honey, vegetable oil, and eggs in another bowl.
- Bring it together by pouring the wet ingredients into the dry mixture and gently folding until just combined.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full.
- Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
- Remove from the oven and drizzle with additional honey before serving.
