Description

Ingredients

  • Carrots: Fresh and firm, cut into sticks or slices
  • Honey: 1 cup
  • Vinegar: 1 cup (white or apple cider)
  • Water: ½ cup
  • Salt: 2 teaspoons
  • Red Pepper Flakes: 1 teaspoon
  • Optional Spices: Peppercorns, garlic, bay leaves

Instructions

  1. Prepare the Carrots: Wash and peel the carrots, then cut them into thin sticks or slices.
  2. Create the Brine: In a saucepan, combine honey, vinegar, water, salt, and red pepper flakes; bring to a gentle simmer.
  3. Cool the Brine: Remove from heat and let it cool for about 10 minutes.
  4. Pack the Jars: Place prepared carrot pieces into a clean jar, packing them tightly.
  5. Pour the Brine: Carefully pour the hot brine over the carrots, ensuring they are submerged.
  6. Seal and Chill: Seal the jar tightly and let it come to room temperature before refrigerating.
