Description

A delightful and comforting chicken stew made easily in the Instant Pot, filled with tender chicken and hearty vegetables.


Ingredients

  • 1 lb chicken thighs or breasts, cut into chunks
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup frozen peas
  • 2 potatoes, diced (optional)

Instructions

  1. Set your Instant Pot to sauté mode and add 2 tablespoons of olive oil. Let it heat until shimmering.
  2. Toss in the chopped onion, carrots, and celery. Sauté for about 3-4 minutes until they soften and a sweet aroma wafts through the air.
  3. Stir in the minced garlic and cook for another minute to release its tantalizing fragrance.
  4. Add the chunks of chicken, diced potatoes, dried thyme, rosemary, salt, and pepper. Stir well to coat the chicken and vegetables in those fragrant spices.
  5. Pour in 4 cups of chicken broth, stirring to combine all the ingredients.
  6. Close the lid and ensure the valve is set to sealing mode. Set the Instant Pot to manual high pressure for 10 minutes.
  7. Once cooking is complete, let the pot naturally release the pressure for about 10 minutes before performing a quick release for any remaining steam.
  8. Open the lid and stir in the frozen peas, allowing them just a minute to warm through.
  9. Ladle the steaming stew into bowls and serve hot.

Notes

Feel free to substitute with any seasonal vegetables or different proteins like turkey or lentils for variety.
