A delightful and comforting chicken stew made easily in the Instant Pot, filled with tender chicken and hearty vegetables.
Ingredients

- 1 lb chicken thighs or breasts, cut into chunks
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup frozen peas
- 2 potatoes, diced (optional)
Instructions
- Set your Instant Pot to sauté mode and add 2 tablespoons of olive oil. Let it heat until shimmering.
- Toss in the chopped onion, carrots, and celery. Sauté for about 3-4 minutes until they soften and a sweet aroma wafts through the air.
- Stir in the minced garlic and cook for another minute to release its tantalizing fragrance.
- Add the chunks of chicken, diced potatoes, dried thyme, rosemary, salt, and pepper. Stir well to coat the chicken and vegetables in those fragrant spices.
- Pour in 4 cups of chicken broth, stirring to combine all the ingredients.
- Close the lid and ensure the valve is set to sealing mode. Set the Instant Pot to manual high pressure for 10 minutes.
- Once cooking is complete, let the pot naturally release the pressure for about 10 minutes before performing a quick release for any remaining steam.
- Open the lid and stir in the frozen peas, allowing them just a minute to warm through.
- Ladle the steaming stew into bowls and serve hot.
Notes
Feel free to substitute with any seasonal vegetables or different proteins like turkey or lentils for variety.
