Description

Tender chicken thighs cooked in a flavorful garlic and ginger sesame sauce, perfect for a comforting meal.


Ingredients

  • 2 lbs boneless and skinless chicken thighs (cut into 12 inch pieces)
  • 2 tablespoons sesame oil
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon ginger (grated)
  • 1/3 cup brown sugar
  • 1/2 cup low sodium chicken broth
  • 1 tablespoon rice vinegar
  • 1/4 cup water
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons water (for cornstarch slurry)
  • 2 tablespoons cornstarch
  • 2 green onions (sliced)
  • Sesame seeds

Instructions

  1. Prepare the Ingredients: Cut the chicken thighs into 1-2 inch pieces and gather all other ingredients for effortless cooking.
  2. Assembly: Add the chicken, soy sauce, sesame oil, minced garlic, grated ginger, rice vinegar, red pepper flakes, brown sugar, chicken broth, and water into the Instant Pot. Stir well to ensure everything is combined.
  3. Cook: Close the lid of the Instant Pot, ensuring the pressure valve is sealed. Set the cooker to High Pressure for 5 minutes.
  4. Natural Release: After the cooking time, allow a 10-minute natural release to prevent splattering. Then, carefully release any remaining pressure before opening the lid.
  5. Thicken the Sauce: Select the Sauté function on LOW. In a separate bowl, whisk together the cornstarch and two tablespoons of water until no lumps remain. Gradually add this mixture to the Instant Pot, stirring gently.
  6. Simmer: Allow the sauce to simmer and thicken over the sauté setting for about 5 minutes, stirring occasionally.
  7. Garnish & Serve: Let the chicken rest for 5-7 minutes as the sauce continues to thicken. Serve over hot rice, garnished with fresh green onions and a sprinkle of sesame seeds.

Notes

For deeper flavor, marinate the chicken in the sauce a few hours or overnight. Customize by adding vegetables like snap peas or bell peppers.
