Description

Ingredients

  • 3 large Russet potatoes, thinly sliced
  • 2 cups Cheddar Jack cheese, shredded
  • 6 slices of smoky bacon, cooked and crumbled
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 cup sour cream
  • 1/4 cup green onions, chopped
  • 1/2 cup jalapeños, sliced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and slice the potatoes into thin rounds, about 1/8 inch thick.
  3. Toss the potato slices with olive oil, salt, and pepper in a large mixing bowl.
  4. Arrange the potato slices in a single layer on a baking sheet.
  5. Bake for about 20 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove from the oven and layer with cheese and bacon.
  7. Broil for an additional 5 minutes, until cheese is melted and bubbly.
  8. Top with sour cream, green onions, and jalapeños before serving.
