- 3 large Russet potatoes, thinly sliced
- 2 cups Cheddar Jack cheese, shredded
- 6 slices of smoky bacon, cooked and crumbled
- 2 tablespoons olive oil

- 1/4 cup green onions, chopped
- 1/2 cup jalapeños, sliced
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and slice the potatoes into thin rounds, about 1/8 inch thick.
- Toss the potato slices with olive oil, salt, and pepper in a large mixing bowl.
- Arrange the potato slices in a single layer on a baking sheet.
- Bake for about 20 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and layer with cheese and bacon.
- Broil for an additional 5 minutes, until cheese is melted and bubbly.
- Top with sour cream, green onions, and jalapeños before serving.
