Description

Ingredients

  • 8 ounces White Chocolate
  • 1 cup Heavy Cream
  • 1/2 cup Pistachio Paste
  • 2 tablespoons Butter
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Sea Salt
  • 8 ounces Dark Chocolate
  • 1 tablespoon Coconut Oil (optional)

Instructions

  1. Melt the white chocolate in a heatproof bowl over simmering water until smooth.
  2. Heat the heavy cream in a saucepan until just simmering, then pour it over the melted white chocolate and let it sit for a minute before stirring.
  3. Mix in the pistachio paste, butter, vanilla extract, and sea salt until smooth.
  4. Refrigerate the ganache for at least two hours until firm enough to scoop.
  5. Scoop portions of the ganache and roll into balls on a lined baking sheet.
  6. Melt dark chocolate and stir in coconut oil if desired.
  7. Dip each ganache ball into melted dark chocolate and let excess drip off before placing back on the baking sheet.
  8. Set truffles at room temperature or refrigerate for 30 minutes.
  9. Store in an airtight container or serve fresh.
