- 1 tablespoon Coconut Oil (optional)
Instructions
- Melt the white chocolate in a heatproof bowl over simmering water until smooth.
- Heat the heavy cream in a saucepan until just simmering, then pour it over the melted white chocolate and let it sit for a minute before stirring.
- Mix in the pistachio paste, butter, vanilla extract, and sea salt until smooth.
- Refrigerate the ganache for at least two hours until firm enough to scoop.
- Scoop portions of the ganache and roll into balls on a lined baking sheet.
- Melt dark chocolate and stir in coconut oil if desired.
- Dip each ganache ball into melted dark chocolate and let excess drip off before placing back on the baking sheet.
- Set truffles at room temperature or refrigerate for 30 minutes.
- Store in an airtight container or serve fresh.
