- Prepare the Apples: Peel, core, and slice the apples into thin wedges. Place the slices in a bowl, drizzle with lemon juice, and sprinkle a little sugar and flour. Toss everything together gently to ensure the apples are well-coated.
- Bake the Crust: On a floured surface, roll out your chilled pastry dough until it reaches about 1/8-inch thickness. Carefully transfer it into the tart pan, trimming off any excess edges. Poke holes in the bottom with a fork to prevent bubbling and bake at 175°C (350°F) for 15 minutes, until just golden.
- Add the Apples: Once the crust is pre-baked, take it out and load it with the prepared apple mixture, evenly spreading the slices for a beautiful presentation.
- Prepare the Cream Topping: In another bowl, whisk together the crème fraîche, remaining egg, sugar, and cinnamon until smooth and creamy. Pour this mixture over the apples, ensuring every corner is covered.
- Finish Baking: Return the tart to the oven and bake for an additional 20-25 minutes, or until the topping turns a beautiful golden brown. If the edges of the crust brown too quickly, use foil to cover them lightly.
