- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup freshly squeezed lime juice
- 1 tablespoon lime zest
- 2 large egg yolks
- Whipped cream (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press this mixture into a greased baking dish.
- Whisk sweetened condensed milk, lime juice, lime zest, and egg yolks in another bowl until smooth.
- Pour the lime mixture evenly over the prepared crust.
- Bake for 15-20 minutes until the filling is set with a slight jiggle in the center.
- Cool at room temperature, then refrigerate for at least 2 hours before cutting.
- Top each bar with a generous dollop of whipped cream before serving.
Notes
Use fresh lime juice for the best flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
