Description

Delight in the vibrant flavors of this Key Lime Poke Cake with a moist texture and creamy topping that brings a refreshing twist to any occasion.


Ingredients

  • 1 box cake mix (any flavor)
  • 3 large eggs
  • 1 cup water
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup Key lime juice
  • 1 container (8 ounces) whipped topping
  • Lime slices (for garnish, optional)

Instructions

  1. Preheat your oven according to the cake mix instructions and grease a 9×13 inch baking pan.
  2. Prepare the cake mix by following the directions on the box. Combine the cake mix with eggs and water until smooth, then pour into the prepared pan.
  3. Bake until a toothpick inserted into the center comes out clean, about 25 to 30 minutes.
  4. Cool the cake for about 15-20 minutes.
  5. Poke holes all over the top while the cake is still warm, about every inch.
  6. Mix together the sweetened condensed milk and Key lime juice in a separate bowl.
  7. Pour the mixture over the hot cake, filling in the holes.
  8. Cool the cake completely, then spread whipped topping over the top.
  9. Chill in the refrigerator for at least 2 hours.
  10. Garnish with fresh lime slices if desired and serve.

Notes

This cake can be made a day in advance. For added fun, try different flavors or add coconut flakes for a tropical twist.
