Description

Delightful soft and fluffy rolls filled with blueberries and a zesty lemon glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 3/4 cup milk
  • 1 cup blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup powdered sugar
  • 12 tablespoons lemon juice for the glaze

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix dry ingredients in a large bowl: flour, sugar, baking powder, and salt.
  3. Incorporate butter until the mixture resembles coarse crumbs.
  4. Add milk and lemon zest, stirring until just combined.
  5. Fold in blueberries gently to avoid bursting them.
  6. Prepare the dough on a floured surface, kneading gently.
  7. Form the dough into a rectangle about 1/2 inch thick.
  8. Roll the dough tightly into a log and slice into 12 equal pieces.
  9. Place the rolls cut-side up in a greased 9×13-inch baking dish.
  10. Bake for 15-20 minutes until golden brown.
  11. Make the glaze by whisking powdered sugar with lemon juice.
  12. Glaze the warm rolls generously and serve.

Notes

Store leftover rolls in an airtight container for up to three days or freeze for longer preservation. Reheat frozen rolls in a preheated oven at 350°F for about 10-15 minutes.
