- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons butter
- 3 egg whites
- 1/4 teaspoon cream of tartar

- Prepare the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, blend the flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs. Add the egg yolk and mix until combined. Press the mixture evenly into a tart pan, ensuring it covers the bottom and sides. Bake for 15-20 minutes until lightly golden, then allow it to cool.
- Make the Lemon Curd: In a saucepan over medium heat, combine 2/3 cup granulated sugar, cornstarch, and water. Stir until the mixture thickens, which should take about 5-7 minutes. Once thickened, whisk in the beaten egg yolks, fresh lemon juice, and lemon zest. Continue cooking for another minute until it thickens further, then remove from heat and stir in 2 tablespoons of butter until melted and smooth. Pour this delectable lemon curd into your cooled tart crust.
- Prepare the Meringue: Using a clean mixing bowl, beat the 3 egg whites with the cream of tartar until soft peaks form. Gradually add the remaining powdered sugar while continuing to beat until you achieve stiff peaks. Spread the meringue over the lemon curd, ensuring it seals properly to prevent shrinking.
- Bake to Perfection: Place the assembled tart in the oven for an additional 10-15 minutes until the meringue becomes lightly golden brown and creates a beautiful contrast against the bright lemon curd. Remove from the oven and allow the tart to cool completely before slicing.
Notes
Use chilled butter for a flakier crust. You can also prepare the crust and lemon curd ahead of time for convenience.
