A decadent Maraschino Cherry Pie with a flaky crust and a luscious cherry filling that will be the star of any gathering.

- 1 pie crust
- 2 cups Maraschino cherries, drained
- 1 cup cherry juice
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon butter
Instructions
- Preheat the oven to 425°F (220°C).
- Roll out the pie crust and place it in a pie dish.
- In a saucepan, combine cherry juice, sugar, cornstarch, and lemon juice over medium heat.
- Cook the mixture while constantly stirring until it thickens.
- Remove from heat and stir in the Maraschino cherries and vanilla extract.
- Pour the cherry filling into the prepared pie crust and dot with butter.
- Cover with a top crust or make a lattice crust.
- Bake for 25-30 minutes, or until golden brown.
- Allow to cool before serving.
Notes
For a make-ahead option, prepare the pie crust and filling a day in advance. For a gluten-free option, use a gluten-free pie crust.
