Instructions
- Combine achiote paste, garlic, onion, citrus juices, cumin, oregano, and salt in a blender to create the marinade.
- Pour the marinade over chicken thighs in a bowl, ensuring they are fully coated, then cover and refrigerate for at least 2 hours.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken thighs for about 6-7 minutes per side until the internal temperature reaches 165°F.
- Rest the chicken for 5 minutes before slicing and serving warm.
Notes
For best flavor, marinate overnight. If grilling isn’t an option, cook in the oven at 400°F for about 25 minutes.
