Description

Tender, juicy chicken thighs marinated in achiote paste and citrus, grilled to perfection for a flavorful culinary experience.


Ingredients

  • Chicken Thighs (skinless, boneless)
  • Achiote Paste
  • Fresh Lime Juice
  • Fresh Orange Juice
  • Garlic (minced)
  • Onion (finely chopped)
  • Cumin
  • Oregano
  • Salt

Instructions

  1. Combine achiote paste, garlic, onion, citrus juices, cumin, oregano, and salt in a blender to create the marinade.
  2. Pour the marinade over chicken thighs in a bowl, ensuring they are fully coated, then cover and refrigerate for at least 2 hours.
  3. Preheat the grill to medium-high heat.
  4. Grill the marinated chicken thighs for about 6-7 minutes per side until the internal temperature reaches 165°F.
  5. Rest the chicken for 5 minutes before slicing and serving warm.

Notes

For best flavor, marinate overnight. If grilling isn’t an option, cook in the oven at 400°F for about 25 minutes.
