Description

A vibrant and refreshing salad blending colorful beans, fresh vegetables, and creamy feta cheese, inspired by Mediterranean gardens.


Ingredients

Scale
  • 400g Mixed Beans (kidney beans, chickpeas, green beans)
  • 1 Red Onion, diced
  • 1 Bell Pepper, diced
  • 200g Cherry Tomatoes, halved
  • 100g Feta Cheese, crumbled
  • 2 tablespoons Olive Oil
  • 1 tablespoon Balsamic Vinegar
  • 1 teaspoon Dried Oregano
  • Salt and Pepper to taste

Instructions

  1. Drain and rinse the beans.
  2. Combine in a bowl: mix beans, red onion, bell pepper, and cherry tomatoes.
  3. Add feta cheese on top.
  4. Prepare the dressing: whisk olive oil, balsamic vinegar, oregano, salt, and pepper.
  5. Dress the salad and mix gently.
  6. Let it rest for 10 minutes before serving.
