- 400g Mixed Beans (kidney beans, chickpeas, green beans)
- 1 Red Onion, diced
- 1 Bell Pepper, diced
- 200g Cherry Tomatoes, halved
- 100g Feta Cheese, crumbled
- 2 tablespoons Olive Oil
- 1 tablespoon Balsamic Vinegar
- 1 teaspoon Dried Oregano
- Salt and Pepper to taste
Instructions
- Drain and rinse the beans.
- Combine in a bowl: mix beans, red onion, bell pepper, and cherry tomatoes.
- Add feta cheese on top.
- Prepare the dressing: whisk olive oil, balsamic vinegar, oregano, salt, and pepper.
- Dress the salad and mix gently.
- Let it rest for 10 minutes before serving.
