- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup mixed berries (strawberries, raspberries, blueberries, blackberries)
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl until evenly mixed.
- Add the cold butter to the dry mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.
- Gently fold in your mixed berries.
- In a separate bowl, combine heavy cream, vanilla extract, and the egg. Whisk until smooth.
- Pour the wet ingredients into the dry mixture and mix with a spatula until just combined.
- Turn the dough onto a floured surface, knead gently until the dough comes together, and pat it into a circle about 1 inch thick.
- Slice the dough into wedges and arrange on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown.
- Whisk together the powdered sugar and milk for the glaze and drizzle over the cooled scones.
Notes
Make-ahead tips: Refrigerate shaped dough for up to 2 days. Use frozen berries by thawing and draining them beforehand.
