Description

Delicious and flaky scones bursting with vibrant mixed berries, perfect for breakfast, brunch, or a delightful snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup mixed berries (strawberries, raspberries, blueberries, blackberries)
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl until evenly mixed.
  3. Add the cold butter to the dry mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.
  4. Gently fold in your mixed berries.
  5. In a separate bowl, combine heavy cream, vanilla extract, and the egg. Whisk until smooth.
  6. Pour the wet ingredients into the dry mixture and mix with a spatula until just combined.
  7. Turn the dough onto a floured surface, knead gently until the dough comes together, and pat it into a circle about 1 inch thick.
  8. Slice the dough into wedges and arrange on the prepared baking sheet.
  9. Bake for 15-20 minutes until golden brown.
  10. Whisk together the powdered sugar and milk for the glaze and drizzle over the cooled scones.

Notes

Make-ahead tips: Refrigerate shaped dough for up to 2 days. Use frozen berries by thawing and draining them beforehand.
