Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Whisk together flour, baking powder, baking soda, spices, and salt in a mixing bowl.
  3. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the eggs one at a time, mixing well after each addition, then stir in buttermilk and vanilla.
  5. Gradually mix in the dry ingredients until just combined.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 25-30 minutes, checking for doneness with a toothpick.
  8. Cool the cakes in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  9. Beat the softened cream cheese and butter together, then gradually add powdered sugar and vanilla until creamy.
  10. Frost the top of one layer, stack the second layer on top, and frost the outside generously.

Notes

Make ahead by baking the cake layers, wrapping them tightly, and storing in the fridge or freezer. Ensure room temperature ingredients for a lighter cake.
