- 1 lb Chicken (Diced)
- 1 tbsp Cajun Seasoning
- 1 tsp Smoked Paprika
- 1/4 tsp Red Pepper Flakes (optional)
- 2 tbsp Olive Oil
- 2 tbsp Butter
- 1 medium Onion (Chopped)
- 3 cloves Garlic (Minced)
- 1 cup Orzo Pasta
- 2 cups Low-Sodium Chicken Broth
- 1 cup Heavy Cream
- 1 cup Parmesan Cheese (Freshly grated)
- 1 tbsp Fresh Parsley (Chopped)
Instructions
- Sear the Chicken: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add diced chicken and season with Cajun seasoning, smoked paprika, and salt. Cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- Sauté the Aromatics: In the same skillet, melt the butter over medium heat. Add chopped onion and sauté for 2-3 minutes until translucent.
- Add Garlic: Stir in minced garlic and cook for another minute until fragrant.
- Incorporate the Orzo: Add orzo pasta, stirring for about a minute to toast lightly.
- Pour in Broth and Cream: Gradually add chicken broth and heavy cream, stir to combine, and bring to a low boil. Reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
- Finish Up: Once orzo is tender, return chicken to skillet. Stir in parmesan cheese until melted, adding extra broth or cream if necessary.
- Garnish and Serve: Top with freshly chopped parsley and enjoy!
Notes
For added flavor, try swapping in shrimp or Andouille sausage. Leftovers can deepen in flavor and are just as delicious the next day.
