Description

Delight in the sweet and tangy flavors of homemade Peach Jam, a perfect spread for breakfast or a sweet addition to any dish.


Ingredients

  • 2 lbs fresh ripe peaches (about 8 or 10)
  • 1 tablespoon lemon zest (optional)
  • 2 tablespoons lemon juice
  • 2 1/2 cups white sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Blanch the peaches by filling a large pot with water and bringing it to a boil. Carefully add the peaches and let them blanch for one minute.
  2. Chill the peaches by transferring them to a bowl of ice-cold water. Allow to cool for one minute, then drain.
  3. Peel and slice the peaches, removing the skins, pits, and chopping them into bite-sized pieces.
  4. Make the jam by combining chopped peaches, lemon juice, sugar, lemon zest, and vanilla extract in the large pot over medium heat. Stir until the sugar dissolves, then bring to a boil and reduce heat to simmer.
  5. Test the consistency by placing a dollop on a cold plate. If it holds its shape, it’s done!
  6. Jar the jam into sterilized jars, leaving about 1/4 inch of headspace. Wipe rims clean, seal with lids, and let cool at room temperature.

Notes

For a smoother texture, blend the peaches before cooking. Store in the refrigerator for up to three weeks or preserve through canning.
