- 2 lbs fresh ripe peaches (about 8 or 10)
- 1 tablespoon lemon zest (optional)
- 2 tablespoons lemon juice
- 2 1/2 cups white sugar
- 1 teaspoon vanilla extract
Instructions
- Blanch the peaches by filling a large pot with water and bringing it to a boil. Carefully add the peaches and let them blanch for one minute.
- Chill the peaches by transferring them to a bowl of ice-cold water. Allow to cool for one minute, then drain.
- Peel and slice the peaches, removing the skins, pits, and chopping them into bite-sized pieces.
- Make the jam by combining chopped peaches, lemon juice, sugar, lemon zest, and vanilla extract in the large pot over medium heat. Stir until the sugar dissolves, then bring to a boil and reduce heat to simmer.
- Test the consistency by placing a dollop on a cold plate. If it holds its shape, it’s done!
- Jar the jam into sterilized jars, leaving about 1/4 inch of headspace. Wipe rims clean, seal with lids, and let cool at room temperature.
Notes
For a smoother texture, blend the peaches before cooking. Store in the refrigerator for up to three weeks or preserve through canning.
