- 6 ounces cream cheese (softened)
- 1/4 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 6 teaspoons raspberry jelly
Instructions
- Preheat the oven to 300°F.
- Grease a six-cup muffin tin.
- Combine almond flour, powdered sugar, and cinnamon in a mixing bowl.
- Add melted butter and stir until dough-like consistency is reached.
- Divide crust mixture evenly between muffin cups, pressing down to about 1/4 inch thick.
- Bake for 10-15 minutes until golden. Allow to cool for 10 minutes.
- In a bowl, beat softened cream cheese until smooth.
- Add peanut butter, powdered sugar, egg, vanilla, and salt; mix until smooth and combined.
- Pour cheesecake batter over the cooled crusts.
- Bake again for 18-20 minutes until set but slightly jiggly in the center.
- Cool completely for about 30 minutes.
