Description

A moist and fluffy cake infused with fresh pineapple juice and crushed pineapple, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup pineapple juice
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple, drained

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a cake pan by greasing and flouring it generously.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium mixing bowl until well combined.
  3. Cream butter and sugar together in a large bowl using an electric mixer until light and fluffy.
  4. Add eggs one at a time, mixing thoroughly after each addition.
  5. Stir in pineapple juice and vanilla extract until combined.
  6. Gradually mix the dry ingredients into the wet ingredients, folding gently until just combined.
  7. Fold in the drained crushed pineapple.
  8. Pour the batter into the prepared cake pan and spread evenly.
  9. Bake in the preheated oven for 30–35 minutes, or until a toothpick comes out clean.
  10. Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, consider using fresh pineapple or adding nuts and shredded coconut.
