Description

Delightful French-inspired roasted potatoes, crispy on the outside and creamy on the inside, infused with garlic and fresh herbs.

Ingredients

Scale
  • 2 lbs Pommes de terre (waxy or starchy potatoes)
  • 1/4 cup Huile d’olive
  • 4 cloves Ail, minced
  • 2 tbsp Herbes fraîches (like rosemary or thyme), chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
  3. Drain and let them cool slightly.
  4. Smash the potatoes on a baking sheet using a potato masher or fork.
  5. Drizzle olive oil over the smashed potatoes, then sprinkle garlic, herbs, salt, and pepper.
  6. Roast for 25-30 minutes until golden and crispy.
  7. Serve hot as a side or snack.

Notes

Prep earlier by boiling and smashing the potatoes, then refrigerate and roast when ready. Cook in an air fryer for a quicker method.
