Description

A vibrant and comforting Potato Taco Bowl filled with roasted potatoes, black beans, corn, and topped with creamy avocado and zesty salsa.


Ingredients

  • 4 medium potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/2 cup salsa
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced potatoes with olive oil and taco seasoning in a mixing bowl until well-coated.
  3. Spread the potatoes onto a baking sheet in a single layer.
  4. Roast for about 25-30 minutes, flipping halfway through.
  5. Layer the roasted potatoes, black beans, corn, and diced red bell pepper in meal prep containers.
  6. Top each bowl with sliced avocado and salsa.
  7. Garnish with fresh cilantro before serving.
