- 2 cups cooked chicken, shredded
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups shredded cheese
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper in a large mixing bowl.
- Spread half of the mixture in a greased 9×13 inch baking dish.
- Sprinkle half of the cheese over the mixture.
- Add the remaining chicken mixture on top.
- Finish with the remaining cheese on top.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Garnish with chopped cilantro, if desired, and serve warm.
