- 2 cups cooked shredded chicken
- 1 cup queso cheese
- 8 corn tortillas
- 1 can black beans, drained and rinsed
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, black beans, salsa, cumin, and chili powder.
- Soften the corn tortillas in a microwave for about 30 seconds.
- Fill each tortilla with the chicken mixture and roll them up.
- Place the rolled tortillas seam-side down in a greased baking dish.
- Pour the queso cheese over the top of the enchiladas.
- Sprinkle shredded cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
