Description

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat until shimmering.

  3. Push the vegetables to one side of the skillet, creating space for the beaten eggs. Pour the eggs in and scramble gently until fully cooked.
