Description

This vibrant Roasted Tomato Salsa, made with caramelized tomatoes, fresh cilantro, and a kick from jalapeño, is perfect for tacos, chips, and grilled meats.


Ingredients

  • 4 ripe tomatoes
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 jalapeño, seeded and chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare your baking sheet by arranging tomatoes, onion, and garlic. Drizzle with olive oil, sprinkle with salt, and mix lightly.
  3. Roast for 20-25 minutes until tomatoes are bursting and caramelized.
  4. Cool the roasted veggies slightly.
  5. Blend roasted ingredients with jalapeño, cilantro, lime juice, salt, and pepper to your desired consistency.
  6. Enjoy the salsa with tortilla chips or as a topping for grilled meats and tacos.
