Description

A satisfying and hearty casserole combining tender tortellini, sweet sausage, vibrant pesto, and gooey mozzarella, perfect for family gatherings.


Ingredients

  • 1 package three cheese tortellini (1 lb)
  • 7 oz pesto
  • 3 sweet chicken sausages (or pork sausages)
  • 3 cups fresh spinach
  • 1 cup grape tomatoes
  • 20 oz mozzarella cheese (shredded)
  • 3 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the tortellini in a large pot of boiling water for about 5-7 minutes, then drain.
  3. Toss the drained tortellini with pesto.
  4. Brown the sausages in a skillet with olive oil for 2-3 minutes.
  5. Combine browned sausages, grape tomatoes, spinach, and 19 oz of mozzarella cheese with the tortellini.
  6. Prepare a 9-inch casserole dish by greasing it with olive oil and pour the tortellini mixture into it.
  7. Top with remaining cheese.
  8. Bake for 20-25 minutes until golden brown.
  9. Serve warm and enjoy!
