- 1 package three cheese tortellini (1 lb)
- 7 oz pesto
- 3 sweet chicken sausages (or pork sausages)
- 3 cups fresh spinach
- 1 cup grape tomatoes
- 20 oz mozzarella cheese (shredded)
- 3 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the tortellini in a large pot of boiling water for about 5-7 minutes, then drain.
- Toss the drained tortellini with pesto.
- Brown the sausages in a skillet with olive oil for 2-3 minutes.
- Combine browned sausages, grape tomatoes, spinach, and 19 oz of mozzarella cheese with the tortellini.
- Prepare a 9-inch casserole dish by greasing it with olive oil and pour the tortellini mixture into it.
- Top with remaining cheese.
- Bake for 20-25 minutes until golden brown.
- Serve warm and enjoy!
