- 2 pounds sweet potatoes
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped walnuts
- 1/2 cup breadcrumbs
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes into uniform pieces.
- Boil the sweet potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain the sweet potatoes and transfer them back into the pot. Mash them with the heavy cream, Parmesan cheese, salt, and pepper until creamy and smooth.
- Spread the mashed sweet potatoes evenly into a baking dish.
- Mix together the chopped walnuts and breadcrumbs with the melted butter.
- Sprinkle the walnut-breadcrumb mixture over the sweet potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown.
- Serve warm alongside your favorite entrees.
