- 2 pounds sweet potatoes
- 1/2 cup butter
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 teaspoon cinnamon
- 2 cups potato chips
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes, then boil them in water until tender.
- Drain the sweet potatoes and mash them in a large bowl.
- Add the butter, brown sugar, vanilla extract, milk, and cinnamon. Season with salt and pepper. Mix until smooth.
- Transfer the mixture to a greased baking dish.
- Crush the potato chips and sprinkle them on top of the sweet potato mixture.
- Bake for about 30 minutes or until the top is golden brown.
- Serve hot as a side dish for your Easter dinner.
