- 4 medium Sweet Potatoes, thinly sliced
- 3 cloves Garlic, minced
- 2 tablespoons Fresh Thyme or Rosemary, chopped (or 1 tablespoon dried)
- 1 cup Parmesan Cheese, grated
- 2 cups Cream (or half-and-half for a lighter version)
- Salt & Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the sweet potatoes thinly using a sharp knife or mandoline.
- Mix cream, minced garlic, chopped herbs, salt, and pepper in a bowl.
- Layer the sweet potato slices in a greased baking dish, pouring cream mixture over each layer.
- Sprinkle Parmesan cheese generously on top.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for another 15-20 minutes until golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
You can prepare this dish a day ahead and store it uncooked in the fridge. For a different flavor, substitute sweet potatoes with butternut squash.
