- 225 g All-purpose flour
- 150 g Sugar
- 2 Eggs
- 80 ml Sparkling water
- 80 ml Oil (vegetable or sunflower)
- ½ packet Baking powder
- 1 jar Sour cherries, well drained
Instructions
- Preheat the oven to 180°C (356°F) with both top and bottom heat.
- Mix the flour, sugar, eggs, sparkling water, oil, and baking powder in a large mixing bowl until you achieve a smooth batter.
- Prepare a springform pan by greasing it lightly, then transfer the batter into the pan and spread it evenly.
- Add the drained sour cherries into the batter, ensuring they are evenly distributed, then press a few into the top.
- Bake for approximately 25 minutes or until golden brown and a toothpick comes out clean.
- Cool the cake for a few minutes before releasing from the pan, then transfer to a wire rack to cool completely.
Notes
For the best flavor, consider making this cake a day in advance. It tastes even better after a night in the fridge.
