Description

A delightful Selters cake filled with luscious cherries, perfect for any occasion.


Ingredients

Scale
  • 225 g All-purpose flour
  • 150 g Sugar
  • 2 Eggs
  • 80 ml Sparkling water
  • 80 ml Oil (vegetable or sunflower)
  • ½ packet Baking powder
  • 1 jar Sour cherries, well drained

Instructions

  1. Preheat the oven to 180°C (356°F) with both top and bottom heat.
  2. Mix the flour, sugar, eggs, sparkling water, oil, and baking powder in a large mixing bowl until you achieve a smooth batter.
  3. Prepare a springform pan by greasing it lightly, then transfer the batter into the pan and spread it evenly.
  4. Add the drained sour cherries into the batter, ensuring they are evenly distributed, then press a few into the top.
  5. Bake for approximately 25 minutes or until golden brown and a toothpick comes out clean.
  6. Cool the cake for a few minutes before releasing from the pan, then transfer to a wire rack to cool completely.

Notes

For the best flavor, consider making this cake a day in advance. It tastes even better after a night in the fridge.
