Description

A refreshing summer dish of succulent shrimp marinated in lime juice, combined with fresh vegetables for a burst of flavor.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup lime juice
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, minced (optional)
  • Salt to taste

Instructions

  1. Marinate the shrimp: In a large mixing bowl, combine the shrimp and lime juice. Ensure the shrimp is fully submerged in the juice to ‘cook’ evenly. Cover and refrigerate for about 120 minutes.
  2. Mix in fresh ingredients: Once the shrimp has ‘cooked’, add in the diced tomatoes, red onion, cucumber, cilantro, jalapeño (if using), and salt. Gently fold the ingredients together.
  3. Serve and enjoy: For the best experience, serve the ceviche chilled.

Notes
