Description

A delightful coconut cake with cream cheese frosting, perfect for any celebration or cozy treat.


Ingredients

  • 1 box white cake mix
  • 1 cup canned coconut milk
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 package cream cheese (8 oz)
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon coconut extract
  • Shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. Combine the cake mix, coconut milk, eggs, vegetable oil, and vanilla extract in a large bowl. Mix until smooth.
  3. Pour the batter into the prepared cake pan and spread it evenly.
  4. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  5. Beat the cream cheese and softened butter until creamy. Gradually add powdered sugar and coconut extract, mixing until smooth.
  6. Cool the cake completely before frosting it with the cream cheese mixture.
  7. Garnish with shredded coconut if desired. Slice, serve, and enjoy!
