Description

Tender pork chops seared to perfection and topped with a sweet and savory sauce made from maple syrup and apple cider vinegar.


Ingredients

  • 4 pork chops (boneless or bone-in)
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 teaspoon smoked paprika (optional)
  • 6 cherry tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons maple syrup
  • 1 tablespoon brown sugar
  • 2 tablespoons butter
  • 4 sprigs fresh rosemary
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Pat the pork chops dry with a paper towel; this ensures a beautiful sear.
  2. Season both sides generously with salt, pepper, and smoked paprika (if using).
  3. Heat olive oil in a cast iron skillet over medium-high heat until it glimmers.
  4. Add the pork chops; let them cook undisturbed for about 4-5 minutes.
  5. Flip the chops and cook for an additional 4-5 minutes until internal temperature reaches 145°F.
  6. Transfer them to a plate and cover with foil to keep warm.
  7. Add the cherry tomatoes to the same skillet and allow them to sizzle for a couple of minutes.
  8. Deglaze the pan by pouring in the chicken broth, scraping up flavorful bits.
  9. Stir in apple cider vinegar, maple syrup, and brown sugar; let bubble for 2-3 minutes until thickened.
  10. Return the pork chops to the skillet and spoon sauce over them.
  11. Add butter and fresh rosemary, allowing to meld together for another minute.
  12. Garnish with parsley before serving.

Notes

Marinate pork for a few hours in advance to enhance flavor. Avoid cooking chops straight from the fridge for even cooking.
