Tender pork chops seared to perfection and topped with a sweet and savory sauce made from maple syrup and apple cider vinegar.

- 4 pork chops (boneless or bone-in)
- 4 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 teaspoon smoked paprika (optional)
- 6 cherry tomatoes
- 1 cup low-sodium chicken broth
- 1 tablespoon apple cider vinegar
- 2 teaspoons maple syrup
- 1 tablespoon brown sugar
- 2 tablespoons butter
- 4 sprigs fresh rosemary
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Pat the pork chops dry with a paper towel; this ensures a beautiful sear.
- Season both sides generously with salt, pepper, and smoked paprika (if using).
- Heat olive oil in a cast iron skillet over medium-high heat until it glimmers.
- Add the pork chops; let them cook undisturbed for about 4-5 minutes.
- Flip the chops and cook for an additional 4-5 minutes until internal temperature reaches 145°F.
- Transfer them to a plate and cover with foil to keep warm.
- Add the cherry tomatoes to the same skillet and allow them to sizzle for a couple of minutes.
- Deglaze the pan by pouring in the chicken broth, scraping up flavorful bits.
- Stir in apple cider vinegar, maple syrup, and brown sugar; let bubble for 2-3 minutes until thickened.
- Return the pork chops to the skillet and spoon sauce over them.
- Add butter and fresh rosemary, allowing to meld together for another minute.
- Garnish with parsley before serving.
Notes
Marinate pork for a few hours in advance to enhance flavor. Avoid cooking chops straight from the fridge for even cooking.
