- 1 leg of lamb (about 4–5 pounds)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup beef or vegetable broth
- 2 tablespoons balsamic vinegar
- 1 onion, quartered
- 4 carrots, chopped
Instructions
- Combine minced garlic, rosemary, thyme, olive oil, salt, and pepper in a small bowl.
- Rub the herb mixture all over the leg of lamb, ensuring every inch is coated.
- Place the seasoned lamb into the slow cooker. Surround it with the broth, balsamic vinegar, onion, and carrots.
- Cover the slow cooker and set it to low, cooking for 6-8 hours.
- Transfer the lamb to a cutting board to rest for a few minutes before slicing.
- Serve with cooked veggies and drizzled juices from the slow cooker.
