Description

A tender and flavorful slow-cooked leg of lamb infused with garlic and herbs, perfect for gatherings and special occasions.


Ingredients

  • 1 leg of lamb (about 45 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup beef or vegetable broth
  • 2 tablespoons balsamic vinegar
  • 1 onion, quartered
  • 4 carrots, chopped

Instructions

  1. Combine minced garlic, rosemary, thyme, olive oil, salt, and pepper in a small bowl.
  2. Rub the herb mixture all over the leg of lamb, ensuring every inch is coated.
  3. Place the seasoned lamb into the slow cooker. Surround it with the broth, balsamic vinegar, onion, and carrots.
  4. Cover the slow cooker and set it to low, cooking for 6-8 hours.
  5. Transfer the lamb to a cutting board to rest for a few minutes before slicing.
  6. Serve with cooked veggies and drizzled juices from the slow cooker.

Notes
