Description

A delightful cake featuring a creamy filling made with sour cream and quark, layered with juicy mandarins, perfect for any occasion.


Ingredients

Scale
  • 200 g flour
  • 90 g butter
  • 60 g sugar
  • 1 egg
  • A pinch of salt
  • 500 g low-fat quark
  • 400 g sour cream
  • 75 ml neutral oil
  • 2 eggs
  • 100 g sugar
  • 1 packet of vanilla pudding mix
  • 1 tsp vanilla paste
  • Zest of half an organic lemon
  • 12 cans of mandarins
  • Optional: 1 packet of light jelly

Instructions

  1. Prepare the crust by mixing flour, butter, sugar, egg, and salt until crumbly; chill for 30 minutes.
  2. Make the filling by whisking quark, sour cream, oil, eggs, pudding mix, sugar, vanilla paste, and lemon zest until smooth.
  3. Preheat the oven to 180 °C (350 °F).
  4. Roll out the chilled dough to fit a springform pan and press it evenly into the bottom and sides.
  5. Assemble the cake by pouring the filling into the crust and topping it with well-drained mandarins.
  6. Bake in the oven for approximately 60 minutes until golden and set.
  7. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Chill butter before mixing for flakiness. Ensure ingredients are at room temperature for a smoother filling.
