- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/3 cup olive oil
- 1 cup shredded cheese (for topping)
- 1/4 cup grated parmesan cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with non-stick spray or line it with paper liners.
- Combine the all-purpose flour, baking powder, and salt in a large mixing bowl. Whisk until evenly mixed.
- Whisk together the eggs, milk, and olive oil in another bowl until well blended.
- Add the wet ingredients to the dry ingredients and stir gently until just combined, being careful not to overmix.
- Fold in the chopped spinach and feta cheese until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Sprinkle shredded cheese on top of each muffin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before serving warm.
