Description

Deliciously fluffy muffins packed with fresh spinach and creamy feta cheese, perfect for breakfast or a snack.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/3 cup olive oil
  • 1 cup shredded cheese (for topping)
  • 1/4 cup grated parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with non-stick spray or line it with paper liners.
  2. Combine the all-purpose flour, baking powder, and salt in a large mixing bowl. Whisk until evenly mixed.
  3. Whisk together the eggs, milk, and olive oil in another bowl until well blended.
  4. Add the wet ingredients to the dry ingredients and stir gently until just combined, being careful not to overmix.
  5. Fold in the chopped spinach and feta cheese until evenly distributed.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Sprinkle shredded cheese on top of each muffin.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before serving warm.

Notes

Store muffins in an airtight container at room temperature for up to three days or freeze for up to three months.
