Description

Delightful mint cheesecake cups with a chocolate cookie crumb crust, perfect for St. Patrick’s Day celebrations.


Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup whipped cream
  • 1 cup chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • Mint leaves for garnish
  • Chocolate shavings (optional)

Instructions

  1. Mix the softened cream cheese, powdered sugar, vanilla extract, and peppermint extract in a medium mixing bowl using an electric mixer until smooth.
  2. Fold in the whipped cream gently to maintain an airy texture.
  3. Prepare the crust by mixing the chocolate cookie crumbs and melted butter in another bowl until well combined.
  4. Assemble by pressing the crumb mixture evenly into the bottom of serving cups.
  5. Layer the mint cheesecake mixture on top of the crust, filling each cup generously.
  6. Chill the cups for at least 120 minutes in the refrigerator.
  7. Garnish each cup with a fresh mint leaf and sprinkle with chocolate shavings if desired.
