Instructions
- Mix the softened cream cheese, powdered sugar, vanilla extract, and peppermint extract in a medium mixing bowl using an electric mixer until smooth.
- Fold in the whipped cream gently to maintain an airy texture.
- Prepare the crust by mixing the chocolate cookie crumbs and melted butter in another bowl until well combined.
- Assemble by pressing the crumb mixture evenly into the bottom of serving cups.
- Layer the mint cheesecake mixture on top of the crust, filling each cup generously.
- Chill the cups for at least 120 minutes in the refrigerator.
- Garnish each cup with a fresh mint leaf and sprinkle with chocolate shavings if desired.
