Description

Ingredients

  • 1 lb chicken breast or thighs, thinly sliced
  • 12 tsp soy sauce
  • 1 tsp honey
  • 1 clove garlic, minced
  • 8 oz noodles (egg noodles, udon, or rice noodles)
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • Other vegetables as desired
  • 3 tbsp soy sauce (for the sauce)
  • 12 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch or arrowroot
  • 23 cloves garlic, minced
  • ¼ cup water or chicken broth
  • Sesame seeds, chopped scallions, chili flakes for garnish

Instructions

  1. Prep ingredients by slicing chicken and vegetables; cook noodles according to package instructions, drain and set aside.
  2. Marinate chicken with 1–2 teaspoons soy sauce, 1 teaspoon honey, and minced garlic for at least 15 minutes.
  3. Make sauce by whisking together soy sauce, honey, rice vinegar, sesame oil, minced garlic, cornstarch, and water or chicken broth until smooth.
  4. Heat oil in a wok or skillet over medium-high heat; add marinated chicken and sear for 4–5 minutes until golden brown and cooked through, then set chicken aside.
  5. Stir-fry vegetables for 2–3 minutes until crisp-tender, starting with bell pepper, broccoli, and carrot.
  6. Combine chicken back into the pan with vegetables; toss in noodles and gradually pour in sauce, cooking for another 1–2 minutes until the sauce thickens.
  7. Serve with garnishes of sesame seeds, scallions, and chili flakes for a burst of color and flavor.

Notes
