- 3/4 cup white granulated sugar
- 1 stick unsalted butter (melted and cooled to room temperature)
- 1 teaspoon baking powder
- 4 large eggs
- 1/2 cup strawberries
- 1 tablespoon white granulated sugar (for the strawberries)
- 1 tablespoon lemon zest
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 cup white chocolate wafers
- Freeze-dried strawberries (finely chopped)
- Additional lemon zest for garnish
Instructions
- Prepare the Strawberry Puree: In a blender, combine the fresh strawberries, 1 tablespoon of sugar, lemon zest, lemon juice, and vanilla extract. Blend until smooth and set aside.
- Beat the Eggs: In a large mixing bowl, whisk the eggs with the remaining sugar until the mixture turns pale and foamy.
- Incorporate the Dry Ingredients: Gently fold in the flour and baking powder until just combined.
- Mix in the Butter: Use a spatula to fold in the melted butter, ensuring it evenly coats the batter.
- Add Color and Flavor: For a touch of blush, stir in a few drops of pink gel food coloring.
- Prepare the Pans: Brush melted butter into the madeleine molds and sprinkle flour, shaking off any excess.
- Fill the Molds: Transfer the batter to a pastry bag and fill each madeleine well about three-quarters full.
- Chill the Batter: Place the filled pan in the refrigerator for 20-30 minutes.
- Preheat & Bake: Preheat the oven to 395°F (220°C). Bake the madeleines for 7-8 minutes until golden.
- Cool & Garnish: Let them cool briefly in the pan before transferring them to a wire rack. Garnish with freeze-dried strawberries and lemon zest.

Make ahead by preparing the batter a day in advance and refrigerating the batter overnight.
