Description

Delicate shell-shaped strawberry madeleines infused with lemon zest and a hint of vanilla, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup white granulated sugar
  • 1 stick unsalted butter (melted and cooled to room temperature)
  • 1 teaspoon baking powder
  • 4 large eggs
  • 1/2 cup strawberries
  • 1 tablespoon white granulated sugar (for the strawberries)
  • 1 tablespoon lemon zest
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 cup white chocolate wafers
  • Freeze-dried strawberries (finely chopped)
  • Additional lemon zest for garnish

Instructions

  1. Prepare the Strawberry Puree: In a blender, combine the fresh strawberries, 1 tablespoon of sugar, lemon zest, lemon juice, and vanilla extract. Blend until smooth and set aside.
  2. Beat the Eggs: In a large mixing bowl, whisk the eggs with the remaining sugar until the mixture turns pale and foamy.
  3. Incorporate the Dry Ingredients: Gently fold in the flour and baking powder until just combined.
  4. Mix in the Butter: Use a spatula to fold in the melted butter, ensuring it evenly coats the batter.
  5. Add Color and Flavor: For a touch of blush, stir in a few drops of pink gel food coloring.
  6. Prepare the Pans: Brush melted butter into the madeleine molds and sprinkle flour, shaking off any excess.
  7. Fill the Molds: Transfer the batter to a pastry bag and fill each madeleine well about three-quarters full.
  8. Chill the Batter: Place the filled pan in the refrigerator for 20-30 minutes.
  9. Preheat & Bake: Preheat the oven to 395°F (220°C). Bake the madeleines for 7-8 minutes until golden.
  10. Cool & Garnish: Let them cool briefly in the pan before transferring them to a wire rack. Garnish with freeze-dried strawberries and lemon zest.

Notes

Make ahead by preparing the batter a day in advance and refrigerating the batter overnight.
